Château L’Ermite d’Auzan lives in a place where the land tilts toward the sea. The Castillon family, four generations deep on this terroir, works the south side of the Costières de Nîmes, looking out toward the Camargue and the Mediterranean—a setting that naturally pulls delicacy and lift into the wines.

The estate’s modern chapter is written as a steady push forward: organic certification in 2020, then a deeper commitment into biodynamics and farm-made inputs, and finally DEMETER in 2024—a progression that reads like a promise to leave the vineyard cleaner than it was found.

Location

The winery is based in Saint-Gilles (30800), at 1301 Chemin d’Auzan.
The estate describes 80 hectares of sunny, south-facing vines “head on to the Sea,” planted on a Rhône-like terrain defined by rolled pebbles. In summer, Mediterranean breezes cut the heat and help preserve fresh fruit character while widening the aromatic range.

The plantings are substantial and clearly mapped on their site, including (among others): Syrah (19 ha), Mourvèdre (19 ha), Grenache Noir (17 ha), Roussanne (8 ha), Grenache Blanc (6 ha), Viognier (4.5 ha), Muscat (4 ha), and Cinsault (4 ha).

Winemaking & Philosophy

The estate frames its direction through farming first: a daily biodynamic practice grounded in environmental responsibility, biodiversity, fertility, and the explicit refusal of synthetic chemicals and GMOs.
From that base, the wines are built to feel like the place itself—sunlit and southern, but held in check by airflow, pebble soils, and the cooling influence of the nearby sea.
