In Davayé, the vines look straight toward the Roches de Solutré and Vergisson, two limestone silhouettes so iconic they became the estate’s name—and the symbol of its promise: to let this corner of the Mâconnais speak with clarity, year after year.
The estate’s modern story begins in 1985, when two families—Collovray and Terrier—built a domaine around Christian Collovray’s vines, with clearly shared roles between vineyard, cellar, and the work of growing a family business.
Location
The domaine sits in the Mâconnais, in southern Burgundy, where rolling hills and limestone cliffs create shifting exposures and micro-terroirs. Here, the soils are described as Callovian clay-limestone, a Jurassic formation dating back around 150 million years, rich in fossils—conditions the domaine links directly to the freshness and minerality it aims for in Chardonnay.
From this base, the appellation map they work across includes Saint-Véran, Pouilly-Fuissé (including Premier Cru), Mâcon-Villages, Mâcon-La Roche Vineuse, Viré-Clessé, and Bourgogne.
Winemaking & Philosophy
The work starts in the vineyard, plot by plot, with a stated goal of precision—so each site can keep its own character. In the cellar, the approach stays traditional in spirit, with an emphasis on mastering each stage from grape to bottle and adapting to the conditions of each year rather than relying on a fixed recipe.
Their environmental commitments are stated plainly: High Environmental Value (HVE) Level 3 since 2017, and organic farming in the vineyards since 2020.
