Fornaci Gavi di Tassarolo
Castellari Bergaglio “Fornaci” Gavi di Tassarolo is a dry white wine from Piedmont in northwestern Italy, produced from 100% Cortese grapes grown in the Gavi DOCG zone around Tassarolo. The wine reflects the classic Gavi style — crisp, mineral-driven, and elegant — shaped by limestone-rich soils and a cool climate that enhances freshness and aromatic purity.
Winemaking process
The wine is produced from estate-grown Cortese grapes cultivated in hillside vineyards in Tassarolo. Vinification typically includes gentle pressing and temperature-controlled fermentation in stainless steel to preserve aromatics, freshness, and varietal character, with no significant oak influence.
Tasting notes
It commonly shows a pale straw-yellow color with green reflections. On the nose, it reveals delicate aromas of citrus, green apple, white flowers, and fresh herbs. On the palate, the wine is crisp and refreshing with notes of lemon, pear, and almond, supported by bright acidity and a clean, mineral finish.
Food pairings
Castellari Bergaglio Gavi pairs well with seafood, shellfish, grilled fish, vegetable dishes, and light pasta preparations. Its freshness also makes it an excellent aperitif and a natural match for Mediterranean cuisine
