Castellaccio 2019 from Fattoria Uccelliera is a classic Super Tuscan-style red blend combining native Sangiovese with international Cabernet Sauvignon. The wine shows depth and structure typical of Tuscan reds while incorporating the richness and complexity that Cabernet contributes, creating a powerful yet balanced wine with aging potential

Winemaking process

The grapes are hand-harvested from hillside vineyards in Tuscany, then fermented in stainless steel tanks for about 15–20 days with regular pump-overs to extract color and tannins. The wine is aged for about 12 months in French oak barriques, followed by additional bottle aging, which adds complexity and smooth integration of tannins.

Tasting notes

The wine displays an intense ruby color with violet reflections and a complex bouquet of blackberry, plum, and dark cherry layered with pepper, vanilla, and spice. On the palate it is full-bodied and structured, with ripe fruit, hints of tobacco and earth, firm tannins, and a long persistent finish.

Food pairings

This wine pairs especially well with grilled or roasted red meats, venison, and game dishes, as well as rich pasta sauces and aged cheeses. Its structure and tannins make it ideal for hearty and savory meals.
